Foodie Mondays= Spring Rolls

So I'm supposed to stay away from fatty/greasy foods and i've been very good about staying away from the gazillion Chinese restaurants on the island. However i do miss wontons and egg rolls.

While shopping at Grand Marche I came across egg roll wrappers (Is there anything they don't carry?!?!?) and decided to make my own

I didn't measure anything so bare with me

I spent way to much time julienne-ing carrots, celery and peppers. I also chopped cabbage, onion and broccoli that i sauteed in a little butter

 I also sauteed some Shrimp seasoned with garlic and soy sauce - somehow i don't have a pic of the shrimp.

Then it was time to assemble


The wrappers where thicker than i expected, i was concerned they wouldn't fry right, that the inner part of the wrapper wouldn't cook.


But they turned out super well

 They were more like spring rolls than shrimp rolls. Next time I'll add more shrimp.

Looks delicious, I admire your willingness to try almost anything your little heart desires, and it always seems to turnout great!!!! Maybe you should consider being a chef also (smile), certainly a lady of many talents. Glad you're able to return to work, god bless, have a great first week back at work, just don't overdo it.

PS It's snowing like heck here at the moment, sure wish I were on a beach!!!!

We are having exceptionally good beach weather this week Gilda. The trade winds have died down, the sun is shinning hot, not a rain cloud in sight.

As for the chef thing...hmm... why not?
